– 1 package lean, organic ground turkey – 1/2 gala apple, diced
– 1/2 jalapeno, diced
– 1 clove garlic, minced
– 1/2 onion, diced and chopped
– seasonings: paprika, cayenne pepper, salt/pepper – 1 tbsp coconut oil or olive oil
Roasted Yam wedges:
– 1 small-medium yam
– 1 tbsp olive oil
– cinnamon and sea salt
Turkey burgers: In a medium sized skillet, heat coconut oil or olive oil over medium heat. Add minced clove of garlic to pan. In a large bowl, using your hands, mix together ground turkey, diced apple, diced jalapeño and diced onion. Wash your hands thoroughly and add seasonings. Mix together again and then roll into small patties. Pack down and add to skillet. Cook about 7-9 minutes over medium heat on both sides or until turkey is cooked to appropriate temperate (165 degrees F). Makes about 4 patties.
Wedges: Preheat oven to 350 degrees F. You can leave the skin on the yam or peel it off, your preference! Slice the yam into large wedges and mix together with olive oil and seasonings. Place on a small baking sheet and bake for about 25 minutes, just until they are soft. Add as a side to any dish or eat as a snack!
