Beef & Squash Stuffed Sweet Potato

– 1 large sweet potato
– 1/2 package ground beef
– 1/2 can chick peas, rinsed and drained – 1 small zucchini, sliced
– 1/2 avocado
– 1 radish
– chopped cilantro
– 1 clove garlic, minced


Preheat oven to 425 degrees F to bake your potato OR place in the microwave wrapped in a paper towel for about 8-12 minutes. While potato is cooking, in a medium skillet, add ground beef and garlic and cook over low-medium heat. Use a spatula to continuously break up the meat. Add the zucchini and chick peas after about 10 minutes or until meat seems to be fully cooked through. Once potato is ready, place on a plate and slice down the middle but NOT all the way through to the other side. Open up and use a spoon to mush the flesh in to form a “bowl.” Add the beef and squash mixture and then garnish with avocado, cilantro and radish.
