– 1 red beet, peeled and diced
– 2 large carrots, peeled and diced
– 1 small head romaine lettuce, washed and chopped – 1/2 bunch of asparagus
– Dressing of choice
– 1 lime, juiced
In a saucepan, combine water with diced beets and carrots. Cook on medium heat for 10-12 minutes. Add asparagus and cook for another 5 minutes. Add any seasonings you would like such as sea salt or black pepper. Add fresh lime juice. In a small bowl, combine chopped romaine lettuce and top it with beet, carrot and asparagus mixture. Add dressing of choice! I like Brianna’s Cilantro Lime Dressing found at Sprouts or Trader Joe’s.
