Brown Rice Pasta & Vegetables with Turkey Meatballs

– 1 package gluten-free brown rice pasta – 1 large tomato
– 1/2 zucchini, chopped
– 1/2 green bell pepper, sliced
– 1/2 red bell pepper, sliced
– 1 package mushrooms, chopped and rinsed – cilantro as garnish
– 1 tbsp olive oil
– 1 clove garlic, minced
– turkey meatballs (see recipe above)


In a small pot, cook brown rice pasta according to the package. While pasta is cooking, in a medium saucepan, add olive oil and clove of garlic and heat on medium heat for 2 minutes. Add zucchini, tomato, mushrooms, and bell pepper; cook for 5-6 minutes. Once pasta is finished cooking, drain and add to a bowl. Add cooked vegetables and mix together. Add turkey meatballs and garnish with chopped cilantro.
