1 package extra firm tofu “chicken”; drained
1 can chick peas; drained and rinsed
1/2 cup wild jasmine rice
1 can crushed tomatoes
1 bunch of cilantro; washed
Seasonings: Curry powder, cumin and turmeric
1 cup vegetable broth
- In a small pot, combine rice and vegetable broth and bring to a boil. Cover, reduce to simmer and cook for 20 minutes.
- Meanwhile, in another pot, combine chick peas, crushed tomatoes, all seasonings, and tofu and cook on medium heat; 10 minutes.
- Once rice is done, drain and combine with chick peas and tofu and serve hot!
