Eggs with Homemade Sweet Potato Hash and Peach Salsa

2 eggs
1 sweet potato
1 peach
1 bell pepper
1/4 red onion
handful fresh cilantro
1- 2 Tbsp coconut oil
dash of seasonings: turmeric, black pepper, sea salt
1/2 cup water


  1. Slice up all vegetables and fruit including peach, bell pepper, sweet potato (keep the skin on or peel it if you don’t like the skins) and red onion
  2. In a saucepan, heat up coconut oil on medium heat and add all vegetables (EXCEPT RED ONION) until begin to crisp on outside – add water and allow to simmer until soft; add numeric seasoning
  3. While cooking – place diced peach and red onion in a small bowl and mix with sea salt, cilantro, and black pepper; set aside
  4. Once vegetables are finished, set aside on a plate
  5. Add two eggs to same saucepan – add a little more coconut oil if necessary (you can also just use more water)
  6. Cook eggs to desired yolk consistency
  7. Add eggs on top of vegetables and then top off with peach salsa. Enjoy!
