Falafel Chick Pea Burgers with Sliced Beet Buns

2 Large Slices of Beets
2 Tbsp Gluten-free Oat Flour
1 Can chick peas, drained & rinsed
1 small carrot, sliced
1 egg
1/4 cup nutritional yeast
1 tbsp flaxseeds
2 Tbsp Coconut oil
1 small tomato, sliced
Few spinach leaves
Cilantro for garnish
Dash of: salt, black pepper, paprika, turmeric


  1. In a food processor or blender, combine chick peas, egg, sliced carrot, flaxseeds, nutritional yeast, flour, and seasonings and blend until just smooth
  2. Heat coconut oil in a skillet and scoop up small rounds of the chick pea mixture using your hands. Roll into patties. It helps to have a little bit of flour on your hands already to prevent excessive sticking
  3. Gently place patties into heated skillet and cook each side for about 4-5 minutes or until begins to become a golden brown on the outside
  4. In a separate pan, heat up a little bit more oil and place your beet slices in when pan is heated. Cook for only a few moments or until the beets begin to soften. Place down on a plate
  5. Top your bottom beet slice with a few leaves of spinach first, then place the cooked chick pea burger on top, then cilantro and tomato and lastly, your other beet slice. Enjoy!
