Blueberry Coconut Flourless Pancakes

2 bananas
3 eggs – 2 w/ yolk, 1 without
Dash of cinnamon
Coconut oil
Toppings of choice: I chose blueberries and shredded coconut, but chocolate chips would be a nice touch as well!


  1. In a blender, combine the bananas and eggs, OR, hand whip them in a large bowl. Your choice. Once the mixture has reached a semi-thick, liquid consistency, turn blender off.
  2. Heat a medium-skillet on medium heat with coconut oil or plant-based oil of choice. Add blueberries and shredded coconut to banana/egg mixture and stir together gently.
  3. Once skillet is warm, pour blend in small rounds. Each pancake will look very flat and liquified at first, but allow a few seconds for the heat to bind it together and wait for edges to bubble before flipping, about 3-5 minutes each side.
  4. Top with fresh fruit and honey and get ready to rock your morning!
