Ginger Oat Cookies

– 1 cup rolled oats
– 2 bananas, peeled
– 1 tbsp ground ginger
– handful of raisins
– 1 tbsp coconut oil
– 1 tsp organic vanilla extract
– 1/4 cup nut butter of choice


Preheat oven to 325 degrees F. In a large bowl, add the bananas and use a potato masher or a large fork to mash the banana. Add the oats, raisins, vanilla, nut butter, and ginger and mix well together. Coat a baking sheet with coconut oil. Use a spoon to scoop small balls of batter onto the baking sheet. Wet hands with cold water and then roll each ball smoothly and evenly space them out. Bake for 8 minutes, turn each one over, and then bake for 8 more.
