Homemade Hash Browns

– 1 russet potato, shredded
– 2 tbsp olive oil
– 1/4 red bell pepper; chopped
– 1-2 leaves of kale; chopped
– small bunch of cilantro; chopped – Sea salt, black pepper


Heat olive oil in a medium-sized pan and add shredded potato. Move potato around quickly and consistently so it doesn’t burn. Add bell pepper and kale and mix together. Move around until potato is soft and all of the vegetables are mixed together. Place alongside an egg for a great breakfast!
