Homemade Ramen

– Ramen noodles, cooked according to package – 2 cups water
– 1 radish, sliced
– 1/2 green bell pepper, coarsely chopped
– 1/2 red bell pepper, coarsely chopped
– 1/2 red onion, chopped in large chunks
– mushrooms, chopped
– 1/4 lime wedge
– 1 clove garlic, minced
– 1/4 jalapeno, sliced into rings
– 1/2 avocado, sliced
– chopped cilantro for garnish
– seasonings: curry powder, turmeric, paprika, cayenne pepper, salt, pepper


In a small pot, add a small amount of water along with garlic and onion. Cook on medium-high heat for 2 minutes. Add all other vegetables besides radishes, and add more water. Add all seasonings. Continue to cook and add more water until it’s more like a soup. Bring to a rolling boil and them simmer and cover. Cook for 5 minutes. Add cooked noodles. Transfer to serving bowl and garnish with radishes, avocado, lime, and cilantro. Enjoy!
