One-Pan Tofu, Broccoli, Cauliflower & Eggplant

1 head of broccoli; washed and sliced
1 head of orange cauliflower; washed and sliced
1 small eggplant; washed and sliced (keep outer skin)
1/2 package extra firm tofu; dried and cubed
1-2 Tbsp Coconut oil
Dash of cumin, paprika, turmeric, sea salt
1/2 cup water


  1. Wash and slice all vegetables and place tofu on paper towel to allow it to dry
  2. Grab a large saucepan or skillet, add coconut oil and heat over low-medium heat
  3. Add broccoli and cauliflower first; allow to slightly crisp up
  4. Add eggplant and water, bring up heat to medium – cook for 10 minutes
  5. Add tofu and all seasonings – cook another 8 minutes or until water starts to evaporate
  6. OPTIONAL: Cook 1 cup of brown rice to serve with dish to add more bulk! (1 cup dried brown rice : 2 cups water or broth – bring to a boil then cover and simmer. Cook for 20 minutes)
