Pumpkin quinoa stuffing recipe – see instructions here
– 1 beefsteak tomato
– 2 cups vegetable broth
Preheat oven to 375 degrees F. Using a pyrex glass baking dish, add vegetable broth. Slice the top of the tomato open and carve out the flesh. Place tomato into the oven for 10 minutes. Bring tomato out and stuff with pumpkin quinoa stuffing. Place back in the oven for another 10 minutes until tomato gets really soft.
