Pumpkin Quinoa Stuffing

– 1/2 can pumpkin puree
– 1 can black beans, drained and rinsed – 2 kale leaves; chopped
– 1 cup dry quinoa, rinsed
– 1 clove garlic, minced
– 1/2 red onion, diced
– 2 cups vegetable broth
– 1 tbsp olive oil


In a small pot, add vegetable broth and add dry quinoa. Bring to a boil then reduce heat to simmer and cover. Cook for 20 minutes. Meanwhile, in a medium saucepan, add olive oil and place over medium heat. Add garlic and onion and cook for 2 minutes. Add all other vegetables, beans and pumpkin; stir. Once quinoa is finished cooking, combine all ingredients together in the saucepan with vegetables. Use as stuffing or as a side dish!
