Red Potato Wedges

4 red potatoes; washed and sliced into wedges
1 Tbsp Olive Oil
2 Scallions
Dash of sea salt and black pepper


  1. Preheat oven to 425 degrees F
  2. Combine potato wedges with olive oil, salt and pepper. Bake in oven on bottom rack for 35-40 minutes or until potatoes begin to brown. Stop halfway and stir
  3. Garnish with scallions and enjoy as a side for any dish!
