– 3 golden potatoes, washed and cubed
– 1/4 butternut squash, peeled and cubed
– 1 tbsp coconut oil
– ground ginger
– 1 tsp nutritional yeast
Preheat oven to 325 degrees F. Combine potatoes and squash together in a bowl along with seasonings, coconut oil and nutritional yeast. Add to a baking sheet and bake for 35 minutes or until soft!
