Roasted Pineapple, Asparagus and Golden Beet Summer Salad

– 1 pineapple, chopped – 2 golden beets, cubed – 1 bunch of asparagus – 1 lemon, juiced
– 1 bunch of dill, chopped
– 1 tbsp olive oil
– sea salt, black pepper, cayenne pepper


Preheat oven to 400 degrees F. Combine olive oil, golden beets and asparagus in a bowl and mix well together. Season with seasonings. Add to baking sheet and roast for 25-30 minutes or until beets become soft. Add pineapple and roast for about 5-7 minutes. Remove from oven and add squeezed lemon juice and chopped dill. Serve up as a side dish or eat alone as a snack!
