Sesame Ginger Chicken Vietnamese Spring Rolls

– 1/4 cup red onion, sliced
– Handful of lettuce
– placed into a bowl
– Large bowl filled with room-temperature water
– Cooked rice (see recipe)
– 1/2 can black beans
– Sliced carrots
– handful of cilantro
– Two rice paper wraps


First, place rice paper wrap into bowl with water to soften the wrap. Let sit about 30 seconds, then remove and place flat onto a plate. Load up the wrap with all listed ingredients above – REMEMBER – less is more. If you overfill your wrap it won’t close properly! Bring portion of wrap closest to you up and over all ingredients. Then tuck in the sides and roll away from you. Repeat until a wrap is formed. Repeat for as many rolls as you want!
