
Ingredients
– 1/2 avocado
– 2-3 kale leaves, raw or lightly wilted
– 1 slice sourdough bread, toasted
– 1 egg, cooked to preference (over easy is best)
– 1 tbsp coconut oil
Directions
Toast you sourdough bread and then place onto a plate. Meanwhile, in a small pan, heat coconut oil on medium heat for 1 minute and then crack egg into pan. Cook both sides for about 4 minutes/side. While egg is cooking, smash avocado using a fork onto piece of toasted sourdough. Next, add kale leaves, then add egg on top.
