– 1 package organic round roast
– 2 large celery stalks, chopped
– 1/2 sweet onion, chopped
– 2 cloves garlic, peeled, smashed and chopped
– 2 quarts water
– 1 tbsp Worcestershire sauce
– 1 tbsp red wine vinegar
– Seasonings: chili powder, cayenne pepper, nutmeg, cinnamon, cloves, bay leaves

Scrub all vegetables and chop into pieces described above. Turn crock pot on High Heat and place in garlic and onion first. Add about 1 inch thick of water. Place round roast on top of garlic and onion pieces to allow drainage and add all other ingredients and seasonings. Cook on high in the crock pot all day – about 6 hours – reduce to low heat and cook for another 2-4 hours depending on how soft or tender you like your meat. Use it for basically any kind of recipe! Add to soups, serve over rice or quinoa, or shred it up and use for tacos. Enjoy!
