Southwest Breakfast Pita Sandwich

– 1 clove garlic, minced
– 2eggs
– 1/4 red onion, diced
– 1/4 green bell pepper, sliced – 1 tomato, sliced
– 1 tbsp coconut oil
– 1 slice pita bread, toasted and opened – 1/2 avocado
– cilantro


In a small saucepan, add coconut oil. Heat on medium heat and add garlic and onion. Cook for 3 minutes, add other vegetables, cook for a few more minutes. In the same pan,
add eggs and quickly use spatula to scramble together. Mix all ingredients together. Toast pita bread and open up. Add scrambled egg mixture into the pita. Add chopped cilantro and sliced avocado. Enjoy!
