Sweet Potato and Pumpkin Curry

– 1 sweet potato, cubed
– 1 zucchini, sliced
– 1 can corn, drained and rinsed
– 1/2 sweet onion, chopped
– 1/2 can pumpkin puree
– 1 can light coconut milk
– 2 tbsp olive oil
– 1 clove garlic, minced
– 1 green bell pepper, sliced
– Seasonings: curry powder, turmeric, cayenne pepper


Heat olive oil over medium heat in a medium sized saucepan. Add garlic and onion. Cook for 3 minutes. Add sweet potato and cook for 5 minutes. Add all other vegetables and sauté for 5-6
minutes. Add pumpkin puree and coconut milk. Bring heat down to just over a simmer and add all seasonings. Cover and cook for 20-25 minutes. Remove lid and stir periodically. Serve over cooked rice or quinoa.
