Crumbled Tofu and Sweet Potato Tacos

1 sweet potato; washed, peeled and cubed
1 avocado; sliced
2 kale leaves; washed and sliced
2 radishes; sliced
1/4 package soft tofu; dried and broken up into pieces
2 yellow corn tortillas
1 lime
1 tsp turmeric
1/2-1 cup wate


  1. In a small pan, add water and turn on heat to medium
  2. Add sweet potato and cook covered on medium for 8 minutes or until begins to soften
  3. Uncover, add kale leaves and soft tofu crumbles
  4. Add turmeric and 1/2 lime juice
  5. Allow to cook for another 8 minutes or until sweet potato is completely soft and kale has wilted
  6. Meanwhile, heat up corn tortillas in another small skillet until crisp and place on plate
  7. Add sweet potato/tofu mixture to tortillas
  8. Top off with sliced avocado, radishes, and squeezed remainder of lime juice!
