Vegetable Egg Scramble2 min read

Ingredients

– 2eggs
– 1/2 red bell pepper; chopped and diced
– 1/4 cup chopped red onion
– 1 clove garlic; minced
– 2 kales leaves; coarsely chopped
– 1 tbsp coconut oil
– Seasonings: turmeric, paprika, black pepper, sea salt

Directions

In a medium-sized pan, heat coconut oil over low-medium heat. Add garlic and onion and sauté for 2-3 minutes. Add all other vegetables and seasonings and cook for about 5 minutes. Add two eggs and quickly use your spatula to scramble them together. Constantly mix together until eggs are completely cooked through then enjoy!
