Warm Kale and Red Cabbage Salad

– 1 cup raw kale leaves
– 3/4 cup red cabbage
– 1/2 cup raw sliced almonds – 1/2 shallot, sliced
– 1 clove garlic, minced
– 1/2 cup water
– 1/2 cup poppy seeds


In a large saucepan, add some water and cook the shallots and garlic for about 1-2 minutes. Add kale and bring more water to the pan. Cook for about 5-7 minutes or until kale begins to wilt. Add cabbage, almonds and poppy seeds; cook for another 2-3 minutes. Serve immediately warm or cold leftovers!
